Seafish with Coconut and Ginger

Serves 4
Ingredients
1 large whole fresh seafish
1 cup melted butter
1 tbsp chopped tarragon
1 cup chopped onions
8 cloves
2 tbsps of grated fresh ginger
1 cup of grated coconut
salt and pepper to taste
Method
- Clean, the fish and put it in a greased roasting tin.
- Smear the inside of the fish with the melted butter and stuff it with the tarragon and onions.
- Stud the top of the fish with cloves and cover with grated ginger and coconut. Coat the fish with butter, season to taste and bake at 375 degrees Fahrenheit or 190 degrees celcius for about 40-50 minutes.
